Oil from the Il Borro estate is an organic extra virgin olive oil, part of Tuscan tradition and a ritual accompaniment to our cuisine. Our olive trees grow on the hills surrounding Valdarno, where the composition of the soil is ideal for this type of crop.
Manual harvesting aims to keep the olives in the best condition, together with a careful assessment the ripeness of the different varieties used: a large percentage of Frantoio, Moraiolo and Leccino, and endless minor varieties.
Cold pressing ensures a high quality yield and our faithfulness to organic production. Despite truly unfavourable weather meaning the harvest was smaller, quality has been positively superior to that of other years.
